When selecting beef, make sure that there is a little bit of marble. Season your beef with salt and pepper
In a Dutch oven, brown your beef with olive oil.
Remove the beef and sauté the onion.
Return the beef into the pot.
I like using a Cabernet for braising.
Add the wine and carrots. Let it simmer for 3 minutes.
Add beef stock.
Cover and braise at 400 degrees for 2 hours.
