How to make gluten free peanut butter cookies

Toast pecan pieces over medium high heat, seasoning with popcorn/nut salt to taste. Preheat oven to 350 degrees.

Mix peanut butter, eggs, and sugar in a mixer.

Add mini chocolate chips.

This is the size scoop I use...perfect little bite sized cookies.

When the pecans are cooled, mix them into the dough.

Portion out the dough onto a parchment lined cookie sheet. Sprinkle a tiny amount of kosher salt onto the top of each cookie. Bake at 350 for 10-12 minutes.

Let cool on the parchment paper. Enjoy!
